  • Pour 3/4 cup of the dressing over shrimp; cover. Refrigerate 1 hour to marinate.
  • Preheat greased grill to medium heat. Drain shrimp; discard marinade. Thread shrimp onto skewers. Grill 2 to 3 min. on each side or until shrimp turn pink. Remove shrimp from skewers. Reduce grill to low heat.
  • Chop shrimp; place in medium bowl. Add corn, red pepper, cheese, cilantro and remaining 1/4 cup dressing; mix lightly. Spoon evenly onto 10 of the tortillas; cover each with second tortilla. Return to grill. Cook 2 to 3 min. or until tortillas are golden brown on both sides and cheese is melted, turning after 1 min.

Substitute

Substitute 2 cups blanched fresh whole kernel corn for the package of frozen corn.

I added chopped onion and used prepared roasted garlic dressing because the Good Seasons mix wasn't available at the store. The Tortillas were very tasty but difficult to do on the grill. The stuffing tended to fall out when they were turned and it was difficult to avoid burning the tortilla shells if they were left on the grill long enough to melt the cheese. Maybe a person could brown the top shell seperately and place it on top after the bottom shell was browned and the cheese was melted.

This recipe sounded GREAT and I had the shrimp on hand, so I picked up the remaining ingredients to make it at my friend's lake house for an afternoon snack. WOW!! This recipe was a HUGE hit with EVERYONE!!! I simply marinated pre-cooked shrimp and 'grilled' the sandwiches in a non-stick frying pan. Folding the tortilla in half eliminated flipping problems. This recipe is a MUST HAVE!!

It worked great. Also tried adding addition left-over cut-up grilled veggies like onions, mushrooms, and green peppers. Tasted great.
