  • Combine ham, cheese and basil. Cut slit in side of each chicken breast to form pocket; stuff with the ham mixture. Close each pocket and secure with a wooden skewer. Set aside.
  • Heat oil in large nonstick skillet on medium-high heat. Add chicken; cook 2 minutes on each side or until golden brown on both sides. Reduce heat to medium-low; cover with lid. Cook an additional 5 to 7 minutes or until chicken is cooked through. Remove chicken from skillet; cover to keep warm.
  • Add onion and garlic to drippings in skillet; cook and stir on medium-high heat until tender. Add tomatoes; cook 1 minute, stirring occasionally. Top with the escarole; cover. Reduce heat to medium; cook an additional 5 minutes or until escarole is softened.
  • Place 3 escarole leaves on each of 4 dinner plates. Remove and discard skewers from chicken; place over escarole. Top with the cooked tomato mixture.


This low calorie main dish makes an impressive addition to your dinner table. Recommended for Phase 1, 2 and 3.

Creative Leftovers

Tightly wrap up any remaining escarole and store in the refrigerator for up to 3 days. Then, chop up and mix with fresh spinach or hot soups before cooking for added flavor.
