  • Heat oven to 350ºF.
  • Combine tomatoes, 1/4 cup onions and peppers. Heat oil in large skillet on medium heat. Add ham, garlic and remaining onions; cook and stir 3 min. Stir in beans; cook 5 min. or until heated through, stirring occasionally while mashing beans with back of spoon.
  • Place bolillos, cut sides up, on baking sheet. Spread with bean mixture; sprinkle with cheese.
  • Bake 5 min. or until cheese is melted. Top with tomato mixture.

For an extra-spicy salsa, add 1/4 cup chopped jarred pickled jalapeños and carrots to tomato mixture.


Substitute French bread rolls for the bolillos.
