  • Preheat oven to 400ºF. Toss vegetables with dressing; spoon into half of 13x9-inch baking dish.
  • Bake 30 min., stirring after 15 min. Coat chicken with coating mix as directed on package. Arrange chicken in single layer next to vegetables. Bake 20 min.
  • Sprinkle with cheese; bake an additional 5 min. or until chicken is cooked through (170ºF) and vegetables are tender.

Rated 4 out of 5 by from All in all it turned out very well. All in all it turned out very well. The chicken had great flavor and moisture. My only issue was that the veggies were not done so next time i'm going to cook the veggies for 40 minutes before adding the chicken b/c the potatoes and carrots were a little too crunchy for my taste. Also, I think I'm going to add some more italian dressing to the mix when I add the chicken for baking.

I made this because I had lots of random things to use up before going on vacation - sweet potatoes, onion, chicken breast, broccoli and fresh parm. I used fresh shredded parm which was great! Would definitely make this again as a healthier alternative during the cold winter months!

Rated 4 out of 5 by from this was a good recipe. this was a good recipe. i may try different vegetables next time because i don't like sweet potatoes (although my family does and loved that part of the meal) and the celery wasn't that great. chicken was wonderful though!

When reading over the recipe, I thought the mix of veggies was a little strange but they tasted wonderful. The chicken was excellent as well. There is no need for additional seasonings. Very easy to make.

Rated 4 out of 5 by from Tasted great, my family loved it. Tasted great, my family loved it. The longest part of making this though was just the chopping of the vegetables. Other than that, it was very easy. Allow the chicken to cook for at least 25-30 min's though.
