  • Preheat oven to 425°F. Mix cornmeal, flour, baking powder and salt in large bowl; stir in 1 cup of the cheese. Beat egg lightly in medium bowl with wire whisk. Add milk and butter; beat until well blended. Add to cornmeal mixture; mix just until moistened.
  • Pour into greased 9-inch round cake pan. Sprinkle with remaining cheese; top with pepper rings.
  • Bake 20 to 25 min. or until golden brown.

Serving Suggestion

Serve with a crisp mixed green salad or steamed vegetable and lean fish, meat or poultry.

Used eggbeaters, skim milk, 2% Kraft Mexican 4 cheese shreds and green and red cubanno peppers which are a little spicy. I did use butter but between 8 servings I calculated that taste was more important than total fat reduced since all of my other substitutions were fat reductions. Next time I would add a Tbsp of chili powder. Good standard receipe improved.

The corn bread was a little dry and next time I make it I will add more milk, in addition I will use the jalapeno and a red bell pepper. The taco cheese gave the crust a beautiful golden brown color. Yummy

Save some time and still acheive a great taste, use a boxed cornbread/muffin mix, dice a small onion, a red pepper and a green pepper and toss into the mix. My kids love it and it takes less than five minutes in prep.

I like the green pepper slices. I used red and green pepper slices. what i liked about this recipes is the cheese in it.

I also prefer a sweeter cornbread, and this didn't have any sugar. Also, the cheese didn't seem to add much to the bread, which makes me think it isn't worth the calories!

This was my 1st time making cornbread from scratch & did add 4 tbsp of sugar it turned out good the only thing was the cheese cooked to fast on top but other than that it was GREAT!!

Rated 4 out of 5 by from Real cornbread does not have sugar. Real cornbread does not have sugar. This is good for bread at a meal. Sugar makes the mix a corn muffin, a dessert, something that could have icing on it. Don't get this confused.
