  • Bring water, vegetables, chives and seasonings to boil in medium saucepan on high heat. Reduce heat to low; cover. Simmer 10 minutes. Do not drain.
  • Melt butter in large saucepan on low heat. Stir in flour. Cook 2 minutes or until bubbly. Gradually add milk, stirring until well blended. Cook on medium heat until mixture boils and thickens, stirring constantly. Add cheese; cook until melted, stirring constantly.
  • Add vegetable mixture; cook until heated through. Do not boil.

Rated 4 out of 5 by from I just finished making this chowder and had my first taste. I just finished making this chowder and had my first taste. It's pretty good, but I think its a bit too cheesy. Compared to the picture on the recipe, mine turned out too orange. I added about 1-2/3 cup of cheese, which was still too much. I would recommend cutting down a bit on the cheese. The vegetables were perfectly cooked though. I'll be making this again with a few modifications.

I made this and my family loved it, although before trying it, my husband complained about it not having meat in it. Once he tasted it he said "it really didn't need meat" and he went back for seconds! I noticed a couple of complaints about it tasting to cheesy, we thought the amount of cheese called for was perfect and I would not change it, but we do love cheese!

Wow....I haven't ever made my own soup from scratch before so I thought making this chowder would be really hard----it turned out to be fairly simple AND definitely delicious! We had it as a side dish with salad and baked chicken but it is so yummy that I will be making it as a main course from here on out.

Rated 5 out of 5 by from I made this for St. I made this for St. Patricks Day and wow! It was sooo easy and good. I think next time I will put bacon bits on the top. It was so good and all of the veggies weren't over cooked and it was so good! I am definately going to make this again!
