  • Add tomatoes, broth, zucchini, macaroni and basil. Bring to boil on high heat.

My husband asked me to start making lighter dinners as he works late and so we eat late after he gets home...He has his "favorites" I make but I try to make new things sometimes to add varity. Usually when I make something new he doesn't like it...but this one he LOVED and asked me to FOR SURE make this again.(he never does that either) I used already cooked chicken and added itilian seasonings instead of just basil..I would say next time I may use alittle more chicken broth as alittle more "juice" would have been nice but it was soooo good and super easy!

Rated 5 out of 5 by from My family loved this. My family loved this. It is now one of our favorites. I used the Italian seasoned stewed tomatoes instead of the plain. With it we had whole wheat french bread that I drizzeled with olive oil and sprinkled with garlic salt and Italian seasoning. The recipe says it serves two, but It served my husband and I and our two small kids. We still had leftovers. This soup is a must have for those cold winter days.

It had great flavor. We added some chopped onion and crushed red pepper for a little added spice. We used wheat noodles and like many others, added some extra. We also didn't use the cheese. Served with hot crescent rolls, it was the perfect cold day meal.

We also substituted a healthier pasta by using Barilla Plus Elbow Macaroni which gave more fiber, protein and omega-3. I may tone down the italian dressing in this recipe just because of my family's taste buds. I will share this with others. We served this with cornbread and steamed vegetables.

Rated 5 out of 5 by from I have a large, picky family to feed. I have a large, picky family to feed. I tripled this recipe with no problem and I didn't have any leftovers! It was a huge hit! It was super easy to make and I will make it again and again! I have made it twice, once with the elbow macaroni and once with shells. I do use diced (usually flavored) tomatos with this recipe.

I used medium shells instead of elbows and used a full box (MUCH more than the recipe called for, even when multiplied by 4, but we loved it with lots of pasta and less broth. It also needed salt for flavor, so I used Morton Lite Salt.

Try substituting the veggies with a bag of frozen sliced green peppers and onions; or add a couple dashes of cayenne pepper to give it a kick! This is a fun recipe to play with. I make a side dish of homemade focaccia bread to go with as well.

Rated 5 out of 5 by from This recipe was great and very easy! This recipe was great and very easy! I used cooked chopped chicken that I had frozen instead of cooking the chicken as directed. I just thawed the chicken and threw it in the last 3 or 4 minutes. I also used petite diced tomatoes instead of stewed. This recipe will become a staple in our household!
