  • Heat oven to 375°F.
  • Brown sausage in large ovenproof skillet sprayed with cooking spray on medium heat; drain. Return sausage to skillet. Add potatoes and tomatoes; stir. Cook 5 min.; stir. Top with VELVEETA.
  • Whisk eggs and water until well blended; pour over ingredients in skillet.
  • Bake 20 to 25 min. or until egg mixture is set in center and VELVEETA is melted. Let stand 5 min. before cutting to serve.

Use Your Stove

Prepare as directed, but do not preheat oven or place skillet in oven to bake. Instead, cover skillet and cook egg mixture on medium-low heat 10 to 15 min. or until egg mixture is set in center and VELVEETA is melted. Uncover; let stand 5 min. before cutting to serve.

Serving Suggestion

Serve with a fresh fruit salad for a delightful breakfast menu.

Variation

For a meatless variation, substitute1/2 cup chopped onions for the browned sausage and add to skillet with potatoes and tomatoes.

I used 1 lb of sausage. I couldn't find the tomatoes w/chillies so used w/garlic & onion instead (14 oz instead of 10 oz). I don't care for Velveeta so used Kraft 4 cheese shredded mix (but only 2 cups) I increased eggs to 10. I never got the potatoes to brown in the first step so kept cooking them. Then it took a long time for the eggs to set, so the bottom burned. However, it did taste pretty good and no one complained. Do allow more cooking time than indicated. (Even with my additions it only served four hearty portions)

I make this for the first time the morning of Thanksgiving as something Hearty to get everyone through till the big meal- and it sure was. Everyone loved it and my kids wanted seconds for sure! I think next time I make it I will throw in some veggies and bacon for something alittle different. It was nice to put together then enjoy my morning coffee and paper while it was cooking. I will definately make this again.

Rated 5 out of 5 by from Great recipe! Great recipe! Every girl I've given it to in the morning has loved it! But I made some changes... 3 andouili sausages instead of pork sausage. 4 browned & broken Kroger hash brown patties instead of frozen shredded hash browns. Add 1 can of green chillies.

Rated 5 out of 5 by from Really is hearty! Really is hearty! But I double everything except the tomatoes and "bake" it in a large electric skillet for about 45 mins. This keeps my oven free for something sweet. Have done w/ rotel tomatoes & regular diced w/ no chiles. All good!

Rated 4 out of 5 by from Very easy to make. Very easy to make. This is a great "method" to use, as you can substitute for any meats or cheeses you like. We used diced ham instead of sausage and it was very good. I left out the Velveeta and, instead, used shredded pepper jack.

It was really good, I think next time I'll use cubed ham instead and omit the rotel since I used even the mild it was a little too hot and didn't think it really needed the extra flavor.
