  • Heat oven to 350ºF.
  • Line 15x10x1-inch pan with parchment paper; spray with cooking spray. Prepare cake batter as directed on package; pour into prepared pan. Spread batter to cover bottom of pan. (Pan will be full.) Bake 20 to 22 min. or until top is golden brown and cake springs back when touched lightly in center. Cool in pan 30 min.
  • Sift sugar over clean kitchen towel. Invert cake immediately onto towel; remove pan. Carefully peel off parchment. Starting at one long side, roll up cake and towel together. Cool completely. Reserve 1 cup berries; coarsely chop remaining berries.
  • Beat pudding mix and milk in medium bowl with whisk 2 min. Refrigerate 5 min. Stir in 1 cup COOL WHIP and chopped berries. Unroll cake; remove towel. Spread berry mixture over cake, leaving 1-inch border around all sides. Reroll cake; wrap in plastic wrap. Refrigerate 1 hour. Unwrap just before serving; place, seam-side down, on platter. Frost with remaining COOL WHIP. Top with reserved berries.

Special Equipment Needed

Use 1 pkg. (3.4 oz.) JELL-O SIMPLY GOOD Vanilla Bean Flavor Pudding.

For best result, use a serrated knife to slice the dessert. This will help prevent the cake roll from tearing or being crushed as it is sliced.

Rated 1 out of 5 by from Made this for the Memorial Day holiday. Made this for the Memorial Day holiday. This is the first time i have made this. The filling is too much and turns soupy once you add the strawberries. I washed the berries and dried them well and let them set out on a paper towel so i would not have extra moisture or water go into the filling. I took the extra filling and froze it to see if it was edible instead of wasting the ingredients. I was disappointed with this recipe and will not make it again. The Angel Lush with the angel food cake is much better. Was going to share with friends but will make a different dessert for the holiday.

Rated 3 out of 5 by from Not like the picture I used a two step angel food cake mix - my preference for 35 years. It does well in a regular pan, but in the 15 x 10 it raised too much. The result was a thicker/firmer cake than your video.I also used non-stick aluminum foil instead of parchment paper. So the bottom of the cake had a strange texture. I substituted raspberry pie filling (Danish Dessert) and it was too runny. When I re-rolled the cake, it cracked along the length. So the whole thing looked rather sad. I covered it all in Cool Whip and dropped it at the potluck and walked away. Hoping it tasted better than it looked. Guess I should have taken a picture.
