  • Heat dressing in large skillet on medium heat. Add chicken and garlic; cover. Cook 5 min. on each side or until chicken is browned on both sides. Remove chicken from skillet; set aside.
  • Add canned tomatoes and water to skillet; stir in rice. Bring to boil; simmer, uncovered, on low heat 10 min. Return chicken to skillet. Top with cheese; cover.
  • Cook 5 min. or until chicken is done (165ºF); top with remaining ingredients.

Special Extra

Add 2 tsp. dried rosemary or thyme with the canned tomatoes.

Rated 5 out of 5 by from Delicious! Delicious! Here are some changes that I made; I first made the brown rice. I made the rice using 1/2 beef broth and 1/2 water. I then started the chicken in Kraft zesty italian light dressing. I sprinkled Italian seasoning and Oregano over the chicken while cooking. After chicken was mostly done, I set the chicken on a plate and to the sauce pan I added 1 can of diced tomatoes, 1 can of Ro-Tel. I then added in the rice and the chicken and let that simmer for 10 minutes. I then topped it with mozzarella. I would recommend these changes.

Rated 4 out of 5 by from Made this tonight for the first time, and it was very good. Made this tonight for the first time, and it was very good. With a few tweeks, it will be excellent. I agree with a previous post: use the same amount of rice and water (not the 2:1 ratio). The rice took longer to cook, so I had to keep adding liquid and even covered it for a while. Definitely add some oregano and basil, and maybe cilantro to the rice for more flavor. Will definitely try again! Yum!

Browned chicken in olive oil, sliced each breast into 2 or 3 long strips.Remove from skillet & add 1 can of diced tomatoes, 1 can of Italian style stewed tomatoes, 1 med onion chopped, & 1 tsp chicken boullion, 1 cup rice. Bring to boil, add chicken, cover & bake 45 min in 400 degree oven. Remove lid, sprinkle with generous cup of Kraft 4 cheese Mexican style cheese, and bake till melted.

Rated 5 out of 5 by from My husband and I loved this dish. My husband and I loved this dish. It was very easy to make and with one pan didn't require alor of clean-up. I cooked the chicken 5 minutes longer then the recipe, because it wasn't done enough. For a little extra flevor try using one 14.5 oz can of Italian seasoned diced tomatoes and one plain, instead of one 28 0z can of plain diced tomatoes.

Rated 2 out of 5 by from I made the recipe exactly as it is on the webiste. I made the recipe exactly as it is on the webiste. The only difference is I subistituted Rotel for the canned tomatos. The flavor is really good, but it took for ever to cook the water out of it. And the rice was still crunchy.. So the cooking time was allot longer than 45 mins. Well at least this was my experience

I liked this recipe, and everyone else loved the chicken, but they were not all so crazy about the rice because it is so tomato-y. I think that many comments about putting more spices in are on the right track. I think I'll put more spices in next time, too, or use diced tomatoes that already have spices added.

Rated 4 out of 5 by from This was different and delicious. This was different and delicious. It was so easy, too. I omitted adding an additional chopped tomato, just used canned. I also added some red pepper flakes since we like a little heat and a dash of rosemary. I didn't have mozzerella cheese, so I used cheddar. Still great!

I do modify it a little to suit my taste more (fresh basil instead of cilantro) but I must give praise where it is due! If I hadn't stumbled upon this recipe several years ago I never would have discovered that Yes, I actually do like tomatoes!
