  • Heat oven to 350°F.
  • Mix graham crumbs, butter and 3 Tbsp. sugar; press onto bottom of 13x9-inch pan.
  • Beat cream cheese, 3/4 cup sugar and vanilla with mixer until blended. Add eggs; mix just until blended. Pour over crust.
  • Bake 30 min. or until center is almost set. Cool. Refrigerate 3 hours. Cut into bars. Decorate with gels and sprinkles to resemble presents.

Variation

Substitute 50 vanilla wafers, crushed (about 1-1/2 cups), and 1/4 cup butter, melted, for the graham cracker crumbs and 1/3 cup butter, melted.

Instead of gel decorations I made a pineapple topping with 2 cans of crushed pineapple, 4 tsp. cornstarch, 2 Tbs. sugar, & 2 tsp. lemon juice. Drained the pineapple & mixed the cornstarch in well & then added all other ingredients & boiled it for about 45 seconds until it was thick & clear. When it was cool I spread it over the cheesecake. DELICIOSO! Can't wait to try it with peaches.

Rated 5 out of 5 by from Yum! Yum! I made these for Christmas brunch and they were great! Easy to do, my first time baking cheesecake and it was super easy. And I could make them ahead, great for the busy holiday season. The only thing I will do different next time is decorate the day they will be served. The sugars and gels "melted" into the cheesecake making them look funny, but still tasted great!

It was really fun to decorate each piece. This would work well for any holiday, or birthdays. The gel decorates better if you're refrigerating overnight. The sprinkles dissolve in the moisture if you tightly cover the bars overnight.

I wasn't overly impressed because the taste wasn't as great as I thought it could have been (as far as cheesecakes go), but the goal for these is presentation and they did quite well. I took them to a party and everyone marveled. They were gone by the end of the night. For this reason I'd make them again.

I did use a lot of extra butter for the crust because I didn't want it to fall apart. Very simple and you don't have to be an artist for these to turn out wonderful.

So, it's great for those family members who aren't huge cheesecake fans. They'll eat it right up. I make it for almost any gathering. I don't bother with the gels...too messy.

I used gels and nonpareils to decorate & nonpareils weeped all over my little presents & they were ugly. I used lemon juice instead of vanilla. Also, covered with foil so didn't turn brown
