  • Place chicken, 4 cups (1 qt.) water and pepper in large Dutch oven. Bring to boil; cover. Simmer on low heat 1 hour. Remove chicken from pot. Discard skin and bones. Cut chicken into bite-size pieces; return to pot.
  • Add remaining water, onions, celery and bouillon. Bring to boil. Simmer on low heat 10 min., stirring occasionally. Add carrots and potatoes; simmer 20 min.; stirring occasionally.
  • Add broccoli and rice; simmer 10 min. Add VELVEETA; cook 5 min. or until VELVEETA is melted.
