Prepare and bake muffins as directed. Mix 1 can (11 oz.) mandarin orange segments, drained; 1 can (8 oz.) crushed pineapple, well drained; and 1 large banana, sliced, in medium bowl. Split 6 baked muffins horizontally in half. Cover bottom halves with 1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, and fruit mixture. Top with muffin tops. Garnish with additional COOL WHIP and toasted BAKER'S ANGEL FLAKE Coconut. Makes 6 servings.

The flavor was ok, but I the cereal didn't get soft enough in the batter, so the texture was too chewy. If I make this recipe again I'll try soaking the cereal in milk while I mix the rest of the batter, then straining it.
these didn't have as much flavor as i expected. i think next time i may add some cinnamon or more cereal
