  • Preheat broiler. Mix honey, salt and pepper; brush evenly on chicken. Place on rack of broiler pan.
  • Broil chicken 4 to 6 inches from heat 5 to 7 min. on each side or until cooked through (170ºF). Brush chicken with marmalade; sprinkle with almonds. Broil an additional 1 to 2 min. or until almonds are lightly toasted.
  • Serve with couscous and broccoli.

Use Tongs When Cooking Chicken

When cooking chicken, use tongs instead of a fork when turning the chicken over. This will help to prevent the juices from running out, resulting in a moister, more flavorful cooked product.

We made this last week for him and some of his friends. They gobbled it up like they had never eaten anything in their life! Even the very fussiest eater of the group came back for seconds, which is very rare for him! ;-)

I had some thin chicken breasts and so 5 minutes on each side under the broiler proved to be too much. I would either use 6 chicken breasts or cut down the cooking time. Otherwise the flavors were really good.
