  • Place potatoes in large bowl; set aside.
  • Cook and stir bacon in skillet on medium heat to desired crispness. Remove bacon from skillet; drain, reserving 2 Tbsp. drippings in skillet. Set bacon aside.
  • Add onion and celery to skillet; cook and stir until celery is crisp-tender. Blend in flour. Stir in water, vinegar, sugar, salt, pepper and bacon. Bring to boil. Cook on medium heat 5 minutes or until thickened, stirring occasionally. Pour over potatoes; mix lightly. Serve warm.

Substitute

Substitute 8 slices OSCAR MAYER Hearty Thick Cut Bacon for the 14 slices OSCAR MAYER Center Cut Bacon.

I also used turkey bacon to cut down on the fat but it made no appreciable difference. Wonderfully tangy and despite misgivings from my sister about a 'vinegary' salad, it was a well-balanced taste.

I did make a couple changes. Added 2 tbs of Balsamic Vinegar to the regular vinegar and I also added red peppers. Neither of these added much to the prep time.

Rated 5 out of 5 by from I have made this several times. I have made this several times. To make and take I cook cool and slice the potatoes. I cook the bacon and make the sauce and keep all separate. Reheat sauce add potatoes then top with bacon wnen warm. Everyone loves it. Doubles nicely.

My whole family enjoyed it. (hint... I used diced canned potatoes which cut down on the prep time, but did not hurt the taste at all!)

Rated 4 out of 5 by from Very good recipe. Very good recipe. We loved it. One thing I would change however is to crumble the bacon rather than use 1' pieces. Also I used only 8 pieces of bacon and it was plenty. Delicious!
