Mix ingredients as directed; spoon into 9-inch microwaveable pie plate. Microwave on HIGH 6 to 7 min. or until heated through, stirring every 3 min. Sprinkle with remaining cheddar. Microwave 2 to 3 min. or until melted.
Serve with assorted crackers and fresh vegetable dippers, such as thick bell pepper wedges, large mushroom caps and/or thick diagonally cut carrot slices.
For best results, use full-fat sour cream as directed in recipe. Or, if you prefer to instead use BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream, add 1 tsp. flour to the cream cheese mixture before using as directed.
