  • Cook and stir bacon in large skillet until crisp. Remove bacon from skillet with slotted spoon; drain on paper towels. Remove and discard all but 1 Tbsp. drippings from skillet. Pour drippings into small bowl; reserve for later use.
  • Add boiling water gradually to cornmeal in large bowl, stirring constantly until blended. Stir in bacon and reserved bacon drippings.
  • Heat oil to 375°F in large skillet on medium-high heat. Drop tablespoonsful of cornmeal mixture into hot oil, adding just enough of the cornmeal mixture to not crowd skillet with cornbread; cook 6 to 8 min. or until cornbread is golden brown on both sides, turning once. Repeat with remaining cornmeal mixture. Serve warm.

Food Facts

The difference between white and yellow cornmeal is the color of the corn used to make the cornmeal. While white corn is slightly sweeter than yellow corn, the different colored cornmeals are interchangeable in recipes. You can also find different grinds of cornmeal, such as fine, coarse and stone-ground cornmeal, available in most larger grocery stores. If using coarse or stone-ground cornmeal to prepare this recipe, you will need to increase the boiling water measure to 1 qt. (4 cups) to get the desired result.

Make Ahead

The cornmeal mixture can be prepared ahead of time. Shape into desired-size patties, then refrigerate up to 4 hours. Cook in the hot oil just before serving.
