The difference between white and yellow cornmeal is the color of the corn used to make the cornmeal. While white corn is slightly sweeter than yellow corn, the different colored cornmeals are interchangeable in recipes. You can also find different grinds of cornmeal, such as fine, coarse and stone-ground cornmeal, in most larger grocery stores. If using coarse or stone-ground cornmeal to prepare this recipe, you will need to increase the boiling water measure to 1 qt. (4 cups) to get the desired result.
The cornmeal mixture can be prepared ahead of time. Shape into desired-size patties, then refrigerate up to 4 hours. Cook in the hot oil as directed just before serving.
