  • Heat oven to 425ºF.
  • Prick each potato several times. Bake 45 min. or until tender.
  • Meanwhile, cook meat with seasoning mix as directed on package.
  • Cut slits in tops of potatoes; top with meat mixture and remaining ingredients.

Rated 5 out of 5 by from I baked the potatoes in the microwave since I was short of time. I baked the potatoes in the microwave since I was short of time. While the meat was cooking I scooped out the potato and mixed with butter and then put back in the skins. I browned the meat with little garlic powder and chopped onion before adding the taco seasoning. My husband remarked numerous times how good it was.

Rated 4 out of 5 by from Because I was taking this to my small group at another's house, I had to adapt it so it was ready to... Because I was taking this to my small group at another's house, I had to adapt it so it was ready to serve "as is" when I arrived. I wound up turning it into a twice baked, stuffed potato. After baking the potatoes as directed, I scooped out the potato, leaving about 1/4 inch in the skins to keep them from collapsing. I mashed the potato with the sour cream, 1/2 c. of the cheese and about 3T of butter. I browned the meat with the taco seasoning and the onions, blended this with the potato mixture, then stuffed it into the potato skins. I topped the potatoes with the remaining cheese,then baked at 350 degrees for about 30 minutes. Everyone commented positively on the spices and the texture. I am looking forward to making this as directed and offering a variety of toppings.

Instead of beef, I used ground turkey and instead of Taco Bell Seasoning, I used my brand. Very tasty! Even my picky eater liked it. Will make again in the future. It was very easy as well. Nothing better for a quick meal before taking the kids to practice because I just added a side salad and YUM!

Rated 5 out of 5 by from This was SO easy to make! This was SO easy to make! I cheated & cooked the potatoes in the microwave. They still came out great tasting. My son loved that he could add his own toppings to the potatoes like he does with tacos. If you buy larger potatoes, you only need one per person. I'd definately make these taco taters again.

Also added the jalapenos for extra zing. Zowie was this good! Would make a great football night snack with smaller potatoes!
