  • Preheat oven to 350°F. Place milk, sugar, baking mix, eggs, butter, brandy and vanilla in blender container; cover. Blend on low speed 3 minutes. (Or, shake vigorously in tightly covered 2-quart jar 30 seconds.)
  • Pour into greased 9-inch pie plate. Sprinkle with raisins and coconut.
  • Bake 40 minutes or until pie is set in center and top is golden brown. Cool on wire rack. Serve warm or at room temperature. Store leftover pie in refrigerator.

Rated 1 out of 5 by from I love coconut pie but something happened with this recipe. I love coconut pie but something happened with this recipe. Are you sure its only 1/2 C baking mix? Mine never set and not only am I totally disappointed but now I'm out of ingredients to try again. Because it wasn't setting up, at all, I kept it in the oven for about 15 minutes longer but had to take it out for fear of totally burning the coconut. Even after a night in the fridge its still as liquidy as ever and I followed the directions exactly. Any thoughts before I try again?
