Prepare using whatever vegetables you have on hand, such as broccoli, cabbage, peas and/or mushrooms.
Bring 4 cups water to boil in large saucepan on high heat. Meanwhile, rinse 1 cup basmati rice. Add rice to boiling water; simmer on medium heat 10 min. or just until rice is tender. Drain rice; spread onto baking sheet; cool completely. Use as directed in recipe.
Substitute farmer cheese, Halloumi cheese or extra-firm tofu for the paneer.
