Irish coffee deserves real whipped cream. I like brown sugar or maple syrup as a sweetner, or Splenda if you have to. Don't think cinnamon or other spices are "authentic", but might be good.

There is a much better recipe for Irish Coffee that actually comes from Dublin. And here it is: In a container with a tight lid add: 1 cup dark brown sugar 1-2 tablespoons of ground cinnamon, gound nutmeg, ground cloves. Mix well. Start with small doses of the spices until you get the proportions that suit you best.
