  • Combine all ingredients except chicken; pour over chicken in shallow dish. Turn to evenly coat both sides of each breast. Refrigerate 30 min. to marinate.
  • Heat broiler. Remove chicken from marinade; discard marinade. Broil chicken, 4 inches from heat, 5 to 6 min. on each side or until done (165°F).

Note

Chicken can be marinated up to 24 hours before broiling.

Special Extra

Sprinkle with additional sliced green onions before serving.

I had never had jerk chicken and was a little nervous about the ingrediants, but I thought this was a wonderful recipe and extremely easy to prepare! I didn't have peppercorn ranch, so I subed regular ranch then added fresh cracked black pepper. Also, I served this on top of a bed of mixed greens, then I added mangoes to give it an island flair. For the dressing, I took honey mustard dressing and added a little lemon juice and zest. Different, but a great break from the usual!

We loved this recipe, although I didn't use the cinnamon the second time i made it and used some lemon pepper instead. served with lime cilantro rice and salad. Keep back some of the marinade to re-coat the chicken when you turn it over. It was wonderful, and the guest loved it. I also waited and added the onions as garnish instead of in the marinade.

I made garlic smashed potatoes with velvetta cheese and corn on the cob. We might have it again tonight it was so easy to make and so very flavorful. I used the peppercorn ranch to dip the chicken in!!! Mmm-Mmm good.

Next time I make this I will grill it (George Foreman style)! I served it with black beans and rice and broccli.Very good!

Rated 4 out of 5 by from I cooked this last night and my family loved it. I cooked this last night and my family loved it. I only let it marinate for about 1 1/2 hour, but the flavor was good. Next time I will marinate it overnight. This is definitely a keeper.
