SOOO good! Took longer than 30 minutes, but well worth it.
I shredded the chicken instead of cutting it into chunks, and it's a little easier to close the quesadilla.
I was a little unsure how this would come out, but it was GREAT! We used roasted red peppers instead or regular peppers. We also used light zesty dressing.
