  • Cook bacon and onions in large skillet on medium heat until bacon is crisp, stirring occasionally; drain.
  • Add next 5 ingredients; mix well. Bring to boil. Simmer on low heat 5 min.
  • Stir in 3 Tbsp. Parmesan cheese. Remove from heat. Let stand, covered, 5 min. before serving. Sprinkle with remaining cheese.

Substitute

Substitute 1/2 cup dry white wine for 1/2 cup of the broth.

Special Extra

Prepare as directed, adding chopped cooked seafood or any of your favorite chopped vegetables, such as green beans, red peppers, well-drained thawed frozen spinach or a blend of your favorite mushrooms, along with the Parmesan cheese.

Next time I make it I will probably cut the bacon strips into pieces and not cut the onion so small. I had a problem with the onion cooking too fast and the bacon too slow. But once i got past that everything began to flow and it turned out great. Also, it is a small meal.. I have a big family and we decided to use it as a side dish tonight.

I had something a lot more complicated planned for dinner last night, and decided I didn't want to go to that much work, so I decided to try this recipe. Boy, am I ever glad I did! My husband and I really, really liked it. I didn't change a thing, and it turned out awesome. It's very simple and easy to make. My husband said I should add this one to the recipe box. Thank you.

All I could taste was bacon and somewhat of a mush. There are MUCH better rice dishes. This got old fast. It was, however, a snap to make. My boyrfriend and I probably won't make this one again.

Rated 5 out of 5 by from I have made this twice now. I have made this twice now. The first time exactly as stated and we enjoyed it. The second time I added portabella mushrooms instead of the tomatoes and added Romano and asiago cheeses. It was perfect for us. We will make it again.

Rated 4 out of 5 by from i used 1/2 cup white wine in place of some of the chicken stock, and also added mushrooms and 2... i used 1/2 cup white wine in place of some of the chicken stock, and also added mushrooms and 2 cloves garlic - it was awesome! next time i'd probably add just a bit more liquid - once i added the cheese, it got really gooey.

Rated 5 out of 5 by from This recipe is awesome. This recipe is awesome. it can be changed to suit your taste or your mood. I always substitute Feta cheese for the parmesan..very yummy, it's a staple in my house. We make it at least every other week.

Rated 5 out of 5 by from Instead of tomatoes, I just half of a orange bell pepper. Instead of tomatoes, I just half of a orange bell pepper. I also used shredded parmesan cheese instead of the grated. It is by far the biggest hit to ever come out of my kitchen!
