This tasty version of classic Italian bread salad tosses stuffing mix and fresh tomatoes, cucumber and red onion with olive oil and red wine vinegar.

What You Need

cups STOVE TOP Stuffing Mix for Chicken in the Canister
1/2
cup hot water
2
medium tomatoes, chopped
1
small red onion, chopped
1/2
 of a small cucumber, chopped
1/4
cup olive oil
2
Tbsp. red wine vinegar

Make It

MIX stuffing mix and hot water in large bowl just until moistened. Let stand 5 minutes.

STIR in tomatoes, onion and cucumber.

MIX oil and vinegar until well blended. Add to stuffing mixture; toss lightly. Serve immediately.

Storage Know-How
Store ripe tomatoes, stem sides down, at room temperature away from direct sunlight. Do not store uncut tomatoes in the refrigerator or they will lose most of their flavor.
