This is a light, but filling meal. I don't care for raw tomato, so I roasted in the oven at 400 for about 10 minutes, and melted the cheese on top. Also added some dried basil on top. Yummy!
This makes a good light meal that doesn't require the hot oven/stove or tending the grill. It's tastier than most microwave food. Plus it's fast to put together!
Very good for introducing kids to new veggies!!
