  • Mix sour cream and dressing mix in medium bowl until well blended.
  • Add spinach, cheese and red pepper; mix well. Cover. Refrigerate several hours or until chilled.
  • Serve as a spread on crackers.

Fun Idea

Spread each RITZ Cracker with spinach spread in circular pattern to resemble a wreath. Decorate with additional roasted red pepper pieces to resemble bows.

Rated 5 out of 5 by from This recipe is easy and GREAT! This recipe is easy and GREAT! I substitute 1 jar of pimentoes, drained, for the red pepper--it's cheaper and just as pretty. This spread is also good on fresh sourdough bread as a sandwich, topped with veggies, and you can even serve it warm!

Rated 4 out of 5 by from This was really good. This was really good. You have to make sure you squeeze all the excess water from the spinach though otherwise it tends to be a bit runny. I made this in a hurry and had that happen. I would definately make it again though!
