  • Heat oil in large skillet on medium heat. Add chicken; cook and stir until lightly browned, stirring occasionally.
  • Add vegetables; cook and stir 3 to 5 min. or until crisp-tender. Stir in broth. Bring to boil.
  • Stir in rice and dressing; cover. Reduce heat to low. Cook 5 min. or until liquid is absorbed and chicken is cooked through.

Cheesy Italian Chicken & Rice with Squash

Use zucchini, yellow squash and red peppers for cut-up fresh vegetables. Prepare and cook as directed. Sprinkle with 1 cup KRAFT Shredded Italian* Mozzarella-Parmesan Cheese Blend; cover. Cook an additional 3 min. or until melted.

Substitute 2 pkg. (6 oz. each) OSCAR MAYER Deli Fresh Grilled Chicken Breast Strips for the fresh chicken. Cook vegetables in 1 Tbsp. oil until crisp-tender. Add chicken breast strips, broth and water; continue as directed.

Rated 4 out of 5 by from I thought it was very good. I thought it was very good. I was running late after work. Needed something fast to make. Many times the recipie says it will only take you 15 min. and it really takes you 40-50 becasue of all of the cutting. I just bought everything already cut up at the store and threw it together in 15 min. and it was easy and actually really good. The only changes to the recipie I made was I sauted the the chicken breast with the olive oil with salt, pepper and garlic and I doubled the amount of italian dressing. My husband sprinkled fresh parm. and romono cheese on it as well. It is a great recipie because it has your protien, veggies and carbs all in one and it was good and not too bad on the fat and calories either.

Rated 4 out of 5 by from I prefer non instant rice too. I prefer non instant rice too. All you have to do is cook your rice and add it to the recipe and heat it thru. I quite often make a big pot of regular rice and divide it into 1cup portions and freeze it. Then when I need rice for a recipe like this I just add it. It will fluff up as it heats thru.

Rated 4 out of 5 by from I used brown rice for nutrition and added mushrooms. I used brown rice for nutrition and added mushrooms. I had to add another 1/4 cup of Italian dressing for flavor. I also added 1 tbsp of minced garlic and 2 tsp of dried basil to the chicken as it cooked. I agree that the name is deceptive, it is more like an Oriental stir-fry. This time I served with parmesan cheese, but next time with soy sauce.

My husband and I loved this recipe, it was quick and easy to make, i would though steam the veg before hand because my carrots were not crisp tender at the end of the cooking time. I had to cook them a bit longer and my chicken got overcooked which the kids did not like at all. But I did like the dressing in it and I thought it was very tasty.

Rated 4 out of 5 by from This recipe was very good and easy to make. This recipe was very good and easy to make. However it definitely took longer than 15 minutes, more like 30-40 minutes. I took the advice of another comment and added 1/2 cup of Zesty Italian dressing and it gave the rice a very plentiful flavor. I used frozen veggies and they worked well.

Rated 4 out of 5 by from I really enjoyed making this. I really enjoyed making this. Very simple with good flavor...almost reminded me of an asian dish. My only concern was that the rice was slightly dry. I may have let it sit in the pan a little longer than necessary on low heat. I just wanted the rice to more moist. A very nice dish though!!

Rated 5 out of 5 by from this is the most amazing chicken recipe i have ever made! this is the most amazing chicken recipe i have ever made! this is a cheap, delicious meal great gor the whole family. everyone from my husband down to my 3 year old and 1 year old LOVED this. and i had yummy left overs the next day for lunch. i cannot get enough of this dish!

It was good and at last something different! I want to use a mix of red and yellow bell peppers and tomatoes next time as I think they would work better with the dressing flavor than carrots and broccoli.
