  • Mix gelatine and sugar in small bowl. Add boiling water; stir 5 minutes or until gelatine is completely dissolved.
  • Beat cream cheese and vanilla in large bowl with electric mixer on medium speed until creamy. Gradually add gelatine mixture, beating until well blended after each addition. Refrigerate 45 minutes or until thickened, stirring every 15 minutes. Pour into pie crust.
  • Refrigerate 3 hours or until firm.

Place completely unwrapped packages of cream cheese on microwavable plate. Microwave on HIGH 15 seconds or until slightly softened.

I added a few drops of yellow food coloring, and also added some other sweetner, splenda, or sweet & low--whatever you prefer, this way it wasn't so tart, using 1 envelope at a time and then tasting it until I liked the taste. I made this for my diebetic father, he raved about it. Then I got the extra serving graham cracker crust and doubled the other ingredients to serve more.I took a double pie to my husband's aunt (she is 91) for her birthday. She also raved about it and I sent her the recipe. She couldn't believed the taste. I am always looking for easy recipes like this one with such low sugar. Another time I doubled the recipe, & the store was out of the block cream cheese, so I used the whipped one one in the small tub, used 2 tubs and I didn't have to add any milk. Worked great!! am anxious to try the other flavors of crystal lite in my next pie.

Rated 5 out of 5 by from My hubby and I are diabtics. My hubby and I are diabtics. This recipe was interduced to us my my mother-in-law. Since I make for my hubby on special occasions. This Valentines Day I'll surprise him by adding chopped strawberries in the mixture and place chocolate dipped strawberries on top. His two favorites in one dessert! I always use Splenda and found a sugar free graham cracker crust too.

Well, it was so easy and very tasty, delicious, that my dear husband started joking about and asking me which supermakert I bought it. He didn't believe me! But I will make it again tonight in front of him.... thank you for this recipe....

My only suggestion is to get creative with the toppings. Try fruit or something to jazz it up a bit. I found caramel topping works very well. Again, not the best cheesecake you'll find, but it is very good, and very simple if you're short on time to spend in the kitchen.

I made this recipe just like the directions said, but I used Lemon Jell-o instead of Knox unflavored gelatin. It was a big success. My kids loved it. I took one to work and they loved it. I even made one with Strawberry Jell-o and it was great too. And it was soooooo easy.

Rated 4 out of 5 by from This is an excellent recipe if you are on the Atkins or low carb diet. This is an excellent recipe if you are on the Atkins or low carb diet. Makes you feel like you are cheating while it is extremely low in carbs. I substitute ground walnuts, 1/3 cup of Splenda and 1 stick of margarine or butter for the crust. Excellent!
