Java Mini Cakes

My kids loved these so much, that they will become regulars. Added a bit of cinnamon to my own cream cheese frosting a d nixed the whip cream bit. These are great!

What You Need

pkg. (2-layer size) chocolate cake mix

cups (about) cooled brewed strong MAXWELL HOUSE Coffee, any variety, divided

1/2

cup cold milk

pkg. (4-serving size) JELL-O Vanilla Flavor Instant Pudding

tub (8 oz.) COOL WHIP Whipped Topping, thawed

Make It

PREPARE cake batter as directed on pkg., substituting equal amount of coffee for the water. Spoon evenly into 24 paper-lined medium muffin cups, filling each cup 1/2 full. Bake as directed on pkg. for cupcakes. Cool.

POUR 1/2 cup of the remaining coffee and the cold milk into medium bowl. (Discard any remaining coffee.) Add dry pudding mix. Beat with wire whisk 2 min. Gently stir in whipped topping; spread evenly onto cakes.

REFRIGERATE at least 1 hour. Decorate as desired. Store leftover cakes in refrigerator.

My husband loved these cupcakes, and he isn't a big sweets person at all. I am making these for my son's birthday party. Next I think I'll use stronger coffee though.

The taste was wonderful once baked, but while they're baking they smell like burning coffee. Also, my cupcakes didn't puff up as they baked; they just spilled over their cupcake liners and baked onto the pan in a mess. I had to turn the mess into a trifle, b/c they were useless as cupcakes. It was a delicious trifle, but I wouldn't try these as cupcakes in the future...maybe a good recipe for a 13x9" cake.

These were great, especially the icing! They didn't have as much coffee flavor as I was expecting, but everyone loved them anyways!

Delicious, but the icing was a bit messy. Tastier than regular frosting, though. Next time I think that I will try to use stronger coffee to get a little more flavor.

These cupcakes are fantastic! I made these for a party, and they were gobbled! I had a bit of icing left over - perfect in a cup of coffee, or on a spoon...

This recipe was VERY quick & easy. I made it into a layer cake instead of cupcakes. It was a great after dinner dessert.
