  • Whisk oil and flour in large skillet until blended; cook on medium-high heat 2 min. or until golden brown, stirring constantly. Add onions, green peppers and garlic; cook and stir 2 min. or until vegetables are crisp-tender.
  • Stir in juice cocktail, sausage, chicken and seasonings. Bring to boil; cover. Simmer on medium-low heat 10 min. or until chicken is done, stirring occasionally.
  • Serve over rice.

Substitute

Prepare using 1 pkg. (12 oz.) OSCAR MAYER Selects Uncured Premium Beef Sausage.

Keeping it Safe

Remember for safety's sake to keep the handles of simmering skillets and pots turned inward on the stove top rather than facing out. This prevents them from being knocked off the stove and burning someone.

Rated 4 out of 5 by from FIRST! FIRST!! DO NOT use olive oil. I dont like to fry and it was the only oil i had....way too strong. I dont think the amount of oil and flour is enough to saute in the beginning (again...cdv been the OO) however, it came out pretty good. I used red, orange, and yellow peppers and canned chicken. Ill add shrimp next time bc i can see that in it. I also used crushed red pepper and tomato soup and water. With initial trial and error this is still a winner.

Rated 5 out of 5 by from We had this for supper! We had this for supper! First I browned the chicken, a little, incorporated beef kielbasa, and (1) medium onion. The chicken was juicy, and tender. Added one drained can of dark red kidney beans, for color. Served it over rice. Next time, maybe I'll add a little shrimp. Very tasty! I would reccommend this recipe to anyone who loves to top off rice. Thanks,again.

I added frozen green beans to make it more of a meal. I added 7 ounces of shrimp that I happened to have. I didn't have any vegetable juice cocktail so I used canned tomato sauce and water. I also used regular Polska Kielbasa instead. Anyway... It was great.

This was very good, but not quite enough spice for us, so we ended up adding additional cayenne pepper and crushed red pepper. And did anybody else think it could use just one more flavor?? I can't identify it since it's been years since I made jambalaya, but something seems to be missing.

Rated 4 out of 5 by from We had this for our "J" night family get together. We had this for our "J" night family get together. It was very good! Spice wise was perfect for me and kids, hubby added a little red pepper to his. It was a hit with the rest of the family. We will make this again.

Rated 4 out of 5 by from A very tasty and quick to make dish. A very tasty and quick to make dish. I browned the chicken breast with the onions and green pepper because I wanted to be sure the chicken was thoroughly done. It turned out just great. Yum!
