  • Heat oven to 350°F.
  • Cut 1/4-inch-deep slits, 1 inch apart in diamond shape, all over meat. Rub with dry rub. Place large sheet of heavy-duty foil on work surface; top with 1 banana leaf lengthwise and 1 banana leaf widthwise. Roll meat with top banana leaf; then roll in the second leaf to fully enclose meat. Tightly seal with foil. Place in 13x9-inch pan. Pour 2 inches of water into pan. Cover tightly with foil.
  • Bake 5 hours or until meat is very tender and can be shredded very easily, adding additional water if needed while cooking. Shred meat before serving.


Prepare using your favorite A.1. Dry Rub such as Cracked Peppercorn or Bold Original.

Serving Suggestion

Serve on buns with coleslaw and a hint of barbecue sauce.
