  • Reserve 1 Tbsp. graham crumbs. Mix remaining crumbs with butter; press onto bottom of plastic wrap-lined 9-inch square pan. Refrigerate until ready to use.
  • Add boiling water to gelatin mix in small bowl; stir 2 min. until completely dissolved. Add ice; stir 2 min. or until thickened. Remove any unmelted ice. Beat cream cheese in medium bowl until creamy. Gradually beat in milk, then lime juice. Add gelatin; mix well. Whisk in 1 cup COOL WHIP. Pour over crust.
  • Refrigerate 6 hours or until firm. Cover with remaining COOL WHIP just before serving; sprinkle with reserved graham crumbs. Use plastic wrap handles to remove dessert from pan before cutting into squares.

    I made this for dessert for my entire family and they LOVED it! Such yummy, fluffly goodness. I could really taste that lime flavor. After reading a couple of the reviews, I was worried that it wouldn't be firm enough, but it came out to the perfect consistency. It turned out exactly like how it looks like in the photo. It was able to stand up on its own nicely, and although the texture was firm enough to keep its shape, it was also very soft and creamy once you put your spoon through it - exactly like what you would imagine the texture of a "cloud square" would be like. I'll point out a couple things I did that may have differed from those who weren't able to achieve the right consistency: 1.) I used a hand mixer and really beat the cream cheese until it was very soft, then I slowly added in the other ingredients one at a time all while mixing at a low speed, and 2.) I constantly mixed the hot water + Jell-o mix for exactly 2 minutes (using a timer) then I added the ice cubes and mixe
