  • Stir boiling water into dry gelatin in large bowl at least 2 minutes until completely dissolved. Stir in lime zest and juice.
  • Add ice cream; stir until completely melted and mixture is well blended. Refrigerate 15 to 20 minutes or until mixture is very thick and will mound. Spoon into crust.
  • Refrigerate 2 hours or until firm. Garnish as desired.

Special Extra

Garnish with fresh lime slices and mint sprigs just before serving.

After putting it in the fridferator for 20 minutes it was a little firm on top but the rest was liquid. When I put it in the crust pan there was too much of it. I think it has too much liquid in it. The next one I make I will use less water. The first one is still firming up I hope it gets firm by this afternoon because I'm suppose to take it to a party. I made it with sugar free gelatin and sugar free ice cream. Do you think this might have been my problem.

Rated 2 out of 5 by from This recipe is very easy to make, but there are a few problems. This recipe is very easy to make, but there are a few problems. First of all, when the directions say to put the mixture in the refridgerator for about 15 to 20 minutes, it doesn't work. When I checked on it after 20 minutes, the mixture was partly thickened on the top creamy part. After 30 minutes, the bottom was getting a little settled. After 40 minutes, the bottom liquid got slightly thicker. I poured the mixture into the crust and the crust was not large enough to hold all of the lime mixture, so I put the extra in custard cups. I noticed the mixture was a bit lumpy on the surface. When the pie was finally done, I cut it open just to find that the texture was just like Jello! When I ate it, the flavor was right, but the texture was very weird and gelatin like. Overall, the flavor was right, but the texture, and the preperation were not as good as I expected. I would not make this next time.

Rated 1 out of 5 by from Quick note from a former Floridian... Quick note from a former Floridian... NO KEY LIME recipe is made with regular limes. Key Limes are yellow on the outside, smaller (bout the size of a quarter), thinner skinned and milder in flavor. And last but not least: NO KEY LIME PIE IS GREEN they are YELLOW ask anyone from the Florida KEYS... Jeesh, this is a major pet peeve of mine. Sry.

Rated 3 out of 5 by from Hmmm. Hmmm. I tend to think that there is a difference between ordinary lime and genuine Key Lime. (Yes, there is such a thing as a Key Lime. They're about the size and shape of a ping pong ball.) I would like to see a Jell-O Key Lime Pudding & Pie Filling - with genuine Key Lime flavor.

This was pretty good but I had made it after making the key lime margarita recipe so was disappointed. The margarita frozen pie is far better and I would make that over this one every time. This could be a nice change that would be better for kids, but this was not our favorite.

Rated 5 out of 5 by from I have made this 3 times. I have made this 3 times. I did it just as directed the first time. Second time I used cherry jello for cherry lime pie. Today I am making peach pie. I am using water instead of lime juice to see if I like it. It is wonderful and very easy to make.

I had this for a cool summer dessert, my husband loved it and we will be having this often, will use this for our pie exchange and will include the directions for making the pie, this is one I think everyone should try. Great recipe!
