  • Combine 4 cups flour, granulated sugar, yeast and salt in large bowl of stand mixer fitted with dough hook.
  • Whisk eggs in separate bowl. Heat butter, sour cream and 1/4 cup milk in small saucepan on low heat until very warm (120°F to 130°F), stirring constantly. Whisk butter mixture into eggs. Pour over flour mixture in mixing bowl; beat on medium-low speed 8 to 10 min. or until mixture forms firm, elastic dough.
  • Knead dough on lightly floured surface 1 min. until smooth; shape into ball. Cover; let rest 10 min.
  • Mix cream cheese, 1 cup powdered sugar, remaining flour, 2 Tbsp. lemon juice and vanilla. Roll out dough on large sheet of parchment paper to 26x10-inch rectangle; spread with cream cheese mixture up to 1-inch of edges. Roll up from long side to form log, using parchment paper to assist in rolling. Spray outside of 9-inch round pan with cooking spray; place in center of same piece of parchment paper. Gently move log, seam side down, around outside edge of pan, taking care not to stretch dough. Pinch edges of log together to complete circle. Lift parchment paper to slide baking sheet underneath. Gently remove pan. Cover loosely with plastic wrap; let stand in warm place 45 min. to 1 hour or until almost doubled in size.
  • Heat oven to 350°F. Whisk egg white and water; brush lightly over dough.
  • Bake 40 min. or until golden brown. Cool completely on wire rack.
  • Mix remaining powdered sugar, remaining milk and remaining lemon juice. Working in sections, drizzle powdered sugar mixture on cake; sprinkling immediately with colored sugar, alternating between colors.

How to Knead Dough Without Dough Hook

Prepare dough, as directed, in large mixing bowl of stand mixer with paddle attachment or large bowl with regular mixer, except beat just long enough to combine dry ingredients with egg mixture, scraping down side of bowl. Place dough on lightly floured surface. Knead dough 8 to 10 min. or until smooth and elastic, incorporating remaining flour as needed. Cover; let rest 10 min. Continue as directed.

What Is Kings Cake?

In New Orleans tradition, this cake is served during pre-Lenten or Mardi Gras occasions. It typically has a hidden treat inside the filling. The colors have significance; green represents faith, purple represents justice and gold or yellow represents power. Also known as Kings Bread or Three Kings Bread, this is served in the Mexican tradition, on January 6th of every year. Whoever finds the hidden treat, usually a porcelain baby, is obligated to bring the baby back to the host's house on February 2nd along with a traditional dish to share.
