  • Heat oil in large saucepan on medium heat. Add garlic; cook and stir 1 min. or until fragrant. Add broth, tomato sauce and diced tomatoes; stir. Bring to boil on medium-high heat. Add noodles; simmer on medium heat 10 min. or until tender. Stir in 2 Tbsp. basil.
  • Mix ricotta, 1/2 cup shredded cheese, 2 Tbsp. Parmesan and remaining basil until blended. Combine remaining shredded cheese and Parmesan.
  • Top each serving of soup with 2 Tbsp. of the ricotta mixture. Sprinkle with shredded cheese mixture.

I've made it for two special birthday lunches for friends, and both asked for the recipe. It's perfect as written, but the basic tomato-basil soup is also good, even without the cheese mixture on top to make it lasagna-ish. Served with a fresh green salad and crusty bread, it's a wonderful meal.

Rated 5 out of 5 by from This is delicious! This is delicious! I browned 1/2 lb. hamburger before adding the garlic and omitted the oil. I didn't have fresh basil, so I used 1 Tbsp. dried. It really tasted just like lasagna and the whole family loved it. This took 25 min. start to finish to make, even with browning the hamburger!
