  • Cook bacon in large skillet until crisp. Remove bacon from skillet, reserving 1 Tbsp. drippings in skillet. Drain bacon on paper towels. Add chicken to reserved drippings; cook and stir 4 to 5 min. or until done. Remove from skillet; cool.
  • Layer carrots, cucumbers, peppers and onions in large bowl; top with chicken.
  • Mix vinaigrette dressing, MIRACLE WHIP, lemon zest and juice until blended; spread over chicken. Crumble bacon. Top dressing mixture with spinach, cheese and bacon. Refrigerate 1 hour. Mix lightly before serving.
