  • Line 9x5-inch loaf pan with foil, with ends of foil extending over sides. Chop 4 wafers; set aside. Arrange 12 of the remaining wafers on bottom of prepared pan.
  • Beat pudding mixes and milk in large bowl with whisk 2 min. (Pudding will be thick.) Stir in COOL WHIP. Spread 1/3 of the pudding mixture over wafers in pan; top with 12 of the remaining wafers and 2 Tbsp. caramel topping; repeat layers. Cover with remaining pudding mixture. Sprinkle with chopped wafers; press gently into pudding mixture.
  • Freeze 4 hours or until firm. Use foil handles to lift dessert from pan; remove foil. Place dessert on plate. Let stand 15 min. to soften slightly before serving.

I made this and let it sit in the freezer all night it was so hard I had to let it thaw before cutting into it. The layers came out really nice. I also made it even more low fat by using reduced fat vanilla wafers, fat free cool whip, sugar free fat free pudding, and fat free caramel sauce. Once I told everyone it was essentially fat free they not only had seconds but thirds. It was a hit!

Rated 5 out of 5 by from only had the recipe a few weeks, have made it 3 times already, used sugar free pudding and low fat... only had the recipe a few weeks, have made it 3 times already, used sugar free pudding and low fat cool whip, I have alot of drop in company (aka grandkids and parents) keeping it in the freezer, I always have a desert! The mini vanilla wafers are perfect size and make a great presentation, have a request to replace my son's B-day cake with this!

It was the first dessert to disappear and then people were scraping the pan to get a taste. I plan to use it for my family reunion in October and over the holidays. Thanks so much for the recipe that made me a hit at church and home.

It needed to stay in the freezer for a longer period of time before serving. I served it after it had been in the freezer for about 6 hours and it still wasn't hard enough to cut in slices. It fell apart. Mine didn't look like the picture but it tasted great!

Rated 3 out of 5 by from I thought this very good as well as easy to make. I thought this very good as well as easy to make. Next time, though, I shall put bananas, strawberries, blueberries with it. In fact, I could add all 3 fruits. It takes longer than 4 hrs. to freeze solid. It was very rich even using Lite Coolwhip, sugar free puddings, and reduced fat cookies.

We had diabetics and waist-watchers so I used low fat Nilla Vanilla Wafers, sugar free pudding and sugar free Cool Whip and only drizzled the caramel over the top layer. Every one loved it, asked for the recipe and begged that I make it at every occasion

Because the springform is larger than the loaf, I increased all ingredients by 50% (3 boxes of pudding, etc.). I garnished it with rosettes of cool whip and the crumbled cookies. My book club loved it!!

Rated 5 out of 5 by from I used low fat for everything and it was ummmmm! I used low fat for everything and it was ummmmm!!! I made it for my b-day, and by the end of the day it was gone!! Next time I'll double up on everything, that's for sure. Maybe insted of caramel topping I'll use strawberry and vanilla pudding. So thank you very much for this recipe!
