Easy/good, I used orange and red pepper. Couldn't find Taco Bell Salsa, used *********.
We loved the taste & I was very happy with the quantity it makes so that we can have a couple more dinners from it. I did what someone else suggested and substituted canned diced tomatoes, onion and 1/2 cup orange juice & garlic for the salsa,
Great dish. However, I make 3 layers (so 18 tortillas), add a can of black beans (drained & rinsed), use 2 cans of corn instead of 1, a 24 oz jar of salsa, and don't skimp on the cheese. I also start with tortillas on bottom of a sprayed pan. Cook about 45 minutes because of thickness. Add sour cream and enjoy!
