  • Heat oven to 375°F.
  • Brown meat with peppers in large skillet; drain. Return to skillet. Stir in salsa, tomatoes and corn.
  • Spread 1 cup meat mixture onto bottom of 13x9-inch baking dish sprayed with cooking spray; top with 6 tortillas, overlapping as necessary. Cover with layers of half each of the remaining meat mixture and cheese; top with remaining tortillas and meat mixture. Cover.
  • Bake 25 to 30 min. or until heated through. Top with remaining cheese; let stand, uncovered, 5 min. or until melted.

Make Ahead

Assemble casserole as directed. Refrigerate up to 24 hours. When ready to serve, bake in 375°F oven 40 to 45 min. or until heated through. Top with cheese; continue as directed.

Rated 5 out of 5 by from Great yummy recipe! Great yummy recipe! I made it today with some modification and my husband and I loved it. I used a can of (diced tomato with chili) and a can of tomato sauce with 1/2 cup of orange juice and some cumin and black pepper. also I sauteed half diced onion along with the green pepper and added a clove of garlic. I cut the recipe to half but used all the cheese and added diced cilantro while layering and it came out great.I used flour tortilla (fajita size) instesd of corn tortilla and served it with Guacamole. you can check my photos :))

I also used the flour tortillas instead of the corn. We used scoops chips to eat ours with and i think we all went back for 2nd's and some for 3rd's. Plenty of left over for tonight, which i know that my family will not mind!

However, I make 3 layers (so 18 tortillas), add a can of black beans (drained & rinsed), use 2 cans of corn instead of 1, a 24 oz jar of salsa, and don't skimp on the cheese. I also start with tortillas on bottom of a sprayed pan. Cook about 45 minutes because of thickness. Add sour cream and enjoy!
