  • Heat oven to 350°F.
  • Reserve 1/4 cup feta. Combine remaining feta with next 4 ingredients. Stir in 1/2 cup peppers.
  • Spoon into 3-cup ovenproof dish; top with remaining peppers and feta.
  • Bake 20 min. or until heated through; top with olives.

Serving Suggestion

Serve with assorted cut-up fresh vegetables, ATHENOS Pita Chips Original, multi-grain toasted chips or thin woven wheat crackers.

Make Ahead

Assemble dip as directed; refrigerate up to 8 hours. When ready to serve, bake, uncovered, in 350°F oven 25 min. or until heated through.

To serve as a cold dip, assemble recipe as directed. Refrigerate several hours or until chilled. No need to bake before serving.

Rated 5 out of 5 by from This dip was delicious! This dip was delicious! I was skeptical when I noticed that most of the ingredients were fat free or light. Yet, the combination makes you completely unable to tell that this dip is "generally nutritous". This dip is easy to make and would be great for parties and potlucks. I would suggest doubling the ingredients if you are using this in a larger crowd, because it will go fast. In addition, there is a strong taste of garlic in this dip; therefore, next time I would change the cloves of garlic needed to 1.5 or 1 instead of 2, just to suit my taste.

Rated 5 out of 5 by from Very good with Wheat Thin Chips and veggies. Very good with Wheat Thin Chips and veggies. I could not find the suggested crackers. Of the veggies I tried, I especially like fresh zucchini rounds. Broccoli, cauli, carrots, celery were good too. I used fat free cream cheese for my family. For disciminating guests, I would probably use the light cream cheese. For family however reducing the fat was not much of a compromise in this recipe.

I made this dip and it was great. I made a few modifications: fat free cream cheese, fat free feta-sundried tomato & basil flavor, and roasted red peppers instead of a regular red pepper. It was so good. I will make this when I need to take something to party, etc. It was easy, healthy, and very good.

Rated 5 out of 5 by from This dip is awesome! This dip is awesome! So easy and very tasty. I used marinated artichokes and the plain artichokes both. There wasn't much of a difference in taste of the final product so save a few calories and use artichokes that are plain. This has become a party favorite of mine, everyone always loves it and asks for the recipe. I serve with baguette rounds toasted with garlic olive oil...super!

I didn't have enough Parmesan cheese, so I did half Mozzarella cheese which gave it a good balance. Also I used much less Feta cheese...only about 1/4 of a package. This made it so the Feta was not too overpowering compared to the artichokes and other cheeses. I took this recipe to work and everyone LOVED it and asked for the recipe! YUM!

I used flavored feta (olive & sun dried tomato) and tried roasted red pepper instead of regular red pepper. Feta added great extra flavor, but the roasted red pepper was too over powering for me. Next time I'd use regular red pepper. I served with Wheat Thin Chips-veggie flavor. Everyone loved it.

Rated 4 out of 5 by from My husand loved this dip. My husand loved this dip. I added salt & pepper because it lacked seasoning but overall it was very tasty. I might add even more seasoning next time with garlic and onion to give it more zest and make it less bland. It's definitely a hit with whatever you choose to serve it with: Tortilla chips, Pita Chips, Pretzels, breadsticks, etc.

Everyone loved it. There was only a spoonful left, so I brought it home so my husband could try it. I will be making it again tomorrow - my husband's request. It was very easy to make and is simply wonderful!
