My husband recently had another kidney stone. He usually likes to eat jello as he recovers and gains his appetite back. I found this recipe (he has diabetes 2 so I was looking for sugar free recipes) & we both love it. Used sugar free jello & fat free sour cream as suggested. After cutting in squares, it is dense enough to just pick up with fingers to eat. Very refreshing for summer.

I made this with sugar free jello and fat free sour cream. It was fantastic! If you are watching your calories then this should be in your refrigerator. Quick and easy to make and does not taste low calorie in any way. I am estimating it around 15 calories per serving.
