  • Add boiling water to gelatin mix in large bowl; stir with whisk 2 min. until completely dissolved. Add cranberry sauce; stir until blended. Stir in cold water. Pour 1-1/2 cups gelatin mixture into 6-cup mold sprayed with cooking spray. Refrigerate 45 min. or until set but not firm.
  • Meanwhile, refrigerate remaining gelatin mixture 45 min. or until thickened.
  • Stir 2 cups COOL WHIP into plain gelatin (in bowl) until blended. Pour over gelatin layer in mold. Refrigerate 4 hours or until firm.
  • Unmold gelatin. Top with remaining COOL WHIP.

How to Unmold Gelatin

Dip mold in warm water for 15 sec. Gently pull gelatin from around edge with moist fingers. Place moistened serving plate on top of mold. Invert mold and plate; holding mold and plate together, shake slightly to loosen.

Substitute

Prepare using 2 pkg. (0.3 oz. each) JELL-O Raspberry Flavor Sugar Free Gelatin.

Rated 5 out of 5 by from Do you want everyone at the party to freak out about your raw artistic food talent? Do you want everyone at the party to freak out about your raw artistic food talent? Do you hate leftovers to bring home afterward? This mold went over so well you would think I invented cranberries. HINT for those of you who haven't made a mold like this before (such as myself before I made it) make sure you use WARM water only for a short time to loosen this. I used hot. For too long. It was more of a festive jello floating device after my mistake. However, the reviews were still raving and I was so proud of my awesome 50's style dessert.

I am diabetic and I love cranberry sauce, I just have to reduce the sugar per serving - So I use Sugar-free Pineapple, Orange or Strawberry Jello to mix with the whole cranberry sauce (makes it less tangy, it you perfer). I even make it just for myself any time of the year too! Nothing fancy, without the CoolWhip and just pour it into individual bowls. Sometimes I add a dash of Allspice to change the flavor a bit and just squirt some sugar-free CoolWhip on the top of it. YUMMY. Very adaptable recipe to change as you like.

Rated 5 out of 5 by from Very easy and delicious. Very easy and delicious. I used raspberry jello because cranberry was sold out, but I think you could adapt this recipe using any flavor you like to match the occassion. I also used whole cranberry sauce and the mold looked very pretty with the whole cranberries on top when it set.
