  • Heat oven to 350°F.
  • Brown meat in large skillet; drain. Add corn and salsa; cook 5 min. or until heated through, stirring occasionally. Mix cottage cheese and sour cream in small bowl.
  • Layer 2 cups chips, half the meat mixture, 3/4 cup cheddar and half the cottage cheese mixture in 2-qt. casserole. Repeat layers of chips, meat mixture and cottage cheese mixture.
  • Bake 35 min. Insert remaining chips around edge of casserole; top with remaining cheddar. Bake 10 min. or until cheese is melted.

Substitute

Substitute 1 cup thawed frozen corn for the canned corn.

Rated 5 out of 5 by from I made this and absolutely loved it. I made this and absolutely loved it. It was easy and me and my roomies thought it was fabulous. I added my own touches though. Instead of corn i used a 16 oz can of refried beans, all of the ingredients were, low-fat, fat-free, or reduced in some way. I also used tostadas instead of the tortilla chips. If you love mexican food, you'll love this!

Rated 4 out of 5 by from I loved this recipe, but I made a few changes. I loved this recipe, but I made a few changes. I cooked a whole pound of beef and added taco seasoning and black beans. I layered it in a 9x13-inch pan, and instead of using chips I used tortillas and then topped it with chips and grated cheese. Delicious! I will definitely make this again.

I used scoop type corn chips and they did get really soggy on the bottom. I blended the cottage cheese to smooth it out and that part was ok, but we couldn't get past the soggy chips.

Rated 1 out of 5 by from I guess if you don't have teeth, you may enjoy this. I guess if you don't have teeth, you may enjoy this. Mealy and mushy. The taste is very one dimensional. Until the texture of this recipe can be improved, I wouldn't bother correcting the flavor. One of the few BAD recipes on this site, IMO.

I used the refried beans also instead of corn, and added more cheese, my 13 year old and husband really liked it. I could use alittle more spice, so I'd add some red peppers or jalapenos next time for my taste buds. Overall very good!

It was a wonderful surprise! My family liked it very much... even my husband who doesn't like cottage cheese. It's a keeper!

Rated 3 out of 5 by from This recipe had a good taste. This recipe had a good taste. However, I used corn chips and it got really soggy. Next time, I may serve the casserole over chips after it has cooked. Also, I used 1/2 a packet of taco seasoning and water to the meat for extra taste!
