  • Drain pineapple, reserving juice. Add enough cold water to juice to measure 1-1/2 cups.
  • Stir boiling water into dry gelatin mix in large bowl at least 2 minutes until completely dissolved. Stir in measured pineapple juice and water. Reserve 1 cup gelatin at room temperature.
  • Stir 1/2 of the crushed pineapple into remaining gelatin. Pour into 6-cup mold sprayed with cooking spray. Refrigerate about 2 hours or until set but not firm (should stick to finger when touched and should mound).
  • Stir reserved 1 cup gelatin gradually into cream cheese in medium bowl with wire whisk until smooth. Stir in remaining crushed pineapple. Pour over gelatin layer in mold.
  • Refrigerate 4 hours or until firm. Unmold. Store leftover gelatin mold in refrigerator.

Substitute 2 pkg. (4-serving size each) JELL-O Orange Flavor Gelatin for 1 pkg. (8-serving size) gelatin.

How to Unmold Gelatin

Dip mold in warm water for about 15 seconds. Gently pull gelatin from around edges with moist fingers. Place moistened serving plate on top of mold. Invert mold and plate; holding mold and plate together, shake slightly to loosen. Gently remove mold and center gelatin on plate.

Food Facts

Do not use fresh or frozen pineapple; gelatin will not set. Be sure to use only canned pineapple.

Special Extra

Garnish gelatin with strips of orange peel for a special occasion.
