  • Heat oil in large skillet on medium-high heat. Add plantain slices, in batches; cook 3 min. on each side until golden brown on both sides. Place in large bowl. Add broth; mash plantains until smooth. Stir in half the garlic; cover to keep warm.
  • Cook and stir bacon in same skillet until crisp. Remove from skillet with slotted spoon; drain on paper towels. Discard drippings from skillet. Crumble chorizo into skillet. Add onions, oregano and remaining garlic; cook 5 min. or until chorizo is done, stirring frequently. Stir in peppers and tomatoes; cook 3 min., stirring occasionally. Stir in chopped pork steak; cook and stir 2 min. or until evenly browned. Stir in bacon.
  • Layer half the plantain mixture in 2-qt. microwaveable casserole; cover with layers of meat mixture, remaining plantain mixture and cheese. Microwave on HIGH 5 min. or until pork steak is done and casserole is heated through.

Serving Suggestion

Serve with a crisp, mixed green salad.

How to Easily Peel Plantains

Use a sharp knife to cut lengthwise slit in peel of each plantain. Soak in warm water 3 min; drain. Slip your fingers under the peel of each plantain, then gently remove peel.

Food Facts

Plantains tend to be firmer and lower in sugar than regular bananas. A staple food in the tropical regions of the world, the firmer unripe plantains have a neutral flavor and texture similar to that of potatoes, making them suitable for steaming, broiling or frying. The sweeter flavor of ripe plantains makes them perfect for snacking.
