  • Heat oven to 400ºF.
  • Spread half the Yukon gold potatoes onto bottom of 2-qt. casserole sprayed with cooking spray; cover with half the onions. Sprinkle with 1 Tbsp. flour, 1/2 cup shredded cheese and 1 Tbsp. Parmesan. Repeat all layers, except use all the sweet potatoes in place of Yukon gold potatoes.
  • Top with remaining Yukon potatoes and flour. Pour milk over all ingredients; cover.
  • Bake 50 min. Top with remaining cheeses; bake, uncovered, 15 min. or until top is golden brown and shredded cheese is melted.

How to Purchase Potatoes

Look for firm, smooth, well-shaped potatoes that are free of wrinkles, cracks and blemishes. Avoid any with green-tinged skins or sprouting "eyes" or buds.


Omit sweet potatoes. Prepare recipe using 2 lb. red potatoes.

Rated 3 out of 5 by from It's Good I would have enjoyed it more with just the Yukons, as I didn't like the combination. If you want to make quick work of this in the oven, boil the potatoes and make a semi-thin roux with milk (OR mix milk with cornstarch). Do the layering, pouring roux and spreading cheese between layers, top with cheese and roux and bake about 10 to 15 minutes. The potatoes are guaranteed to be done this way and it will be more creamy and moist. JGP--the instructions say to start with Yukons w/flour and cheese, then repeat that layer with sweet potatoes, flour and cheese, then you will top the casserole with the remaining Yukons and flour. So, Yukons, sweet potatoes, Yukons.

Rated 1 out of 5 by from Question on the preparation I was looking at this to make for an upcoming event, and, was confused by the directions. Does this end up with 3 layers (2 with Yukon potatoes and onions and one with just sweet potatoes), or, do you leave the other half of the Yukon potatoes out as it states in the directions?
