  • Sprinkle each fillet with juice and pepper. Arrange broccoli spears on narrow end of each fish fillet; roll up. Secure with toothpicks. Place, seam side down, in 10x6-inch microwavable dish; cover.
  • Microwave on HIGH 5 to 7 minutes or until fish flakes easily with fork.
  • Mix all remaining ingredients in small microwavable bowl. Microwave 2 to 3 minutes or until sauce is smooth, stirring after each minute.
  • Remove toothpicks from fish roll-ups. Serve fish with sauce.

    I absolutely love this recipe. My one-year-old and my husband also approve. I didn't realize making fish in the microwave could be so easy AND good. I don't usually have Velveeta, so I just use whatever cheese I have -- cheddar, american. And I don't use as much cheese because less makes more than enough. But it does taste good on white rice or even some angel hair pasta.

    This recipe was quite good. I used small broccoli pieces, so it didn't stay together very well, but the taste was fabulous.
