  • Heat oven to 375°F.
  • Beat dressing, cake mix and eggs in large bowl with mixer on low speed just until moistened. Add lemon zest. Beat on medium speed 2 min. (Dough will be stiff.)
  • Drop rounded teaspoonfuls of dough, 2 inches apart, onto baking sheets sprayed with cooking spray.
  • Bake 9 to 11 min. or until lightly browned. (Cookies will still appear soft.) Cool on baking sheets 1 min. Remove to wire racks; cool completely.
  • Mix frosting and lemon juice until blended; spread onto cookies.

Use a small spring-handled ice cream scoop to get rounded teaspoonful-size balls of dough.

Rated 5 out of 5 by from i absolutly loved this cookie.i didnt cook it at 375 though.at 350 and i used lemon cake mix.then i... i absolutly loved this cookie.i didnt cook it at 375 though.at 350 and i used lemon cake mix.then i used vanilla frosting with the lemon juice on top of that.without the frosting it wasnt much of a cookie.but with it, it tasted awesome.nice and fluffy.when i did cook it at 375 the cookies were burned.will have to make some more next week.i love lemon cookies.

I made them with Miracle Whip Light, but next time I will try with regular Miracle Whip to see if that changes the taste. The frosting was horrible! Next time, I will use the ready-to-eat lemon flavor frosting you can buy at the store.

Rated 4 out of 5 by from Very good flavor. Very good flavor. We don't even put the frosting on as we are watching our weight. However, we really like lemon so I kick it up with a couple of tsp of lemon juice in the batter to make up for the lemon flavor lost by not putting on the frosting.

Rated 5 out of 5 by from Wow! Wow! What an amazing recipe. This is a quick summer time favorite. I recently made these cookies for a party and by the end of the party they were all gone. Instead of using white cake mix use lemon cake mix. It adds a little more of a lemon kick!

Rated 4 out of 5 by from i didnt put frosting on them; instead i put the juice of 1 medium lemon in the batter, and used... i didnt put frosting on them; instead i put the juice of 1 medium lemon in the batter, and used lemon cake mix. they turned out good, but needed to be a tad sweeter, so i put powdered sugar over the top. theyre like mini-cakes in consistency.

Rated 4 out of 5 by from This was a very easy recipe to make! This was a very easy recipe to make! It turned out wonderfully! The cookie is very moist. I think next time I'll use lemon icing...I didn't get enough of the lemony flavor with the vanilla/lemon juice combo. Great cookie none the less!

Rated 4 out of 5 by from This was a fantastic cookie. This was a fantastic cookie. Light and delicious. I did use lemon icing for more lemon flavor and I even use fat-free Miracle Whip. Think I might it sometime with orange instead of lemon.

Rated 5 out of 5 by from I didn't bake the cookies... I didn't bake the cookies... but I did eat them. And all I have to say is that they are THE MOST delicious lemon cookie I have ever eaten. Crisp, lemony, and purely delightful!
